MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Adelaide Knitting Club Shortbread Categories: Five, Cookies, Snacks Yield: 12 servings 225 g Plain flour; sifted 125 g Caster sugar 150 g Cold butter; in sm pieces 1 ts Vanilla essence (extract) Set your oven to 180┬░C/360┬░F and line two baking trays. Place the flour and sugar into a mixing bowl. Add the butter and push it through the dry ingredients with your fingertips, until blended. Add the vanilla and roll the mixture into a ball of dough. On a floured work surface roll out the dough with a rolling pin to a thickness of about a centimetre. Cut out your biscuits using your favourite cookie cutters. Keep rolling and cutting until you use up the rest of the dough. You should get around 12 biscuits. Place on the tray with plenty of room between them as they will spread slightly while baking.
