MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Samuel Whiskers' Roly-Poly Pancakes Categories: Breads Yield: 12 servings 3/4 c Unbleached white flour 1/4 c Whole-wheat flour 1/4 c Corn meal 2 ts Baking powder 2 ts White sugar 1/2 ts Salt 1/4 ts Nutmeg 1 lg Egg 2 tb Oil Dab of butter Put the white flour, whole-wheat flour, corn meal, baking powder, sugar, salt, and nutmeg into a mixing bowl and stir them lightly with a fork until they are thoroughly mixed. Add the egg, milk, and vegetable oil to the mixture. Beat with a rotary beater until the batter is smooth and creamy. Meanwhile, heat the griddle. To find out when it's hot enough, sprinkle it with a few drops of water. If the drops dance and skitter around, the griddle is ready. Put a dab of shortening on a crumpled-up paper towel and grease the griddle lightly. Be careful, because the griddle is hot. Pour the batter on the griddle with a ladle, leaving space between each pancake so they don't run together. When the pancakes are bubbly in the center and dry around the edges, turn them over with a spatula and cook them for one more minute.
