MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Samson's Carrot Cookies Categories: Cookies, Snacks, Grains, Fruits, Nuts Yield: 36 Servings 1 c Flour 1 ts Baking powder 1/2 ts Salt 1/2 ts Cinnamon 1/2 ts Nutmeg 1/2 c Brown sugar 1 lg Egg; lightly beaten 1 c Rolled oats 1 c Shredded carrot 1/2 c Shredded apple 1/2 c Chopped walnuts 1/3 c Dried cranberries Heat the oven to 375┬░F/190┬░C. Line cookie sheet with parchment paper. In a small bowl, whisk together the flour, baking powder, salt cinnamon, and nutmeg. In a large bowl, stir together the brown sugar and melted butter. Then, beat in the egg with a fork. Stir the flour mixture into the sugar mixture until the batter is smooth. Then stir in the oats, shredded carrot and apple, walnuts, and cranberries. Drop rounded tablespoons of batter onto the cookie sheet, spacing them about 1/2" apart. Bake the cookies until they just begin to turn golden brown on top, about 8 minutes. Leave them on the baking sheet for 2 minutes before moving them to a wire rack to cool.
