MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Anita's Homemade Meatballs Categories: Beef, Grains, Herbs, Cheese Yield: 5 servings 2 lg Eggs 1/4 ts Salt 3 cl Garlic; minced 1/4 c Flat leaf parsley; chopped 24 oz Ground chuck 2 tb Milk 2 tb Parmesan cheese; grated 1/4 c Seasoned bread crumbs 1/2 c Quick oats; pulsed in a food - processor Set oven @ 400┬░F/205┬░C. Pulse half a cup of instant oatmeal in a food processor until it is fine like breadcrumbs. Finely mince the fresh garlic cloves (about 2 tbsp minced). Chop the parsley. Beat eggs in a separate bowl prior to combining with meat. To make the meatballs, combine meat, garlic, breadcrumbs, oatmeal, Parmesan, eggs, salt, pepper, parsley, and a splash of milk in a mixing bowl. Mix together well with hands. Roll into 25 1 1/2-inch balls and place on a broiling pan (to drain any excess grease while cooking). You can also use a cookie sheet, or place a metal cooling rack in a cookie sheet to allow grease to drain. Bake for 20 minutes. You can turn halfway through if you want crispy sides top and bottom, if they are not resting on a rack. Place baked meatballs in a pan with your desired sauce (like marinara or your choice).
