MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Left Over Turkey Enchiladas Categories: Latino, Poultry, Vegetables, Breads, Cheese Yield: 10 Servings 1/4 c Olive oil 1/2 c Onions; chopped 1/2 c Bell pepper; chopped 2 c Left over turkey; chopped 2 c Corn niblets 15 oz Can enchilada sauce 3 ts Chilli spice mix 1 ts Salt 1 c Cheddar cheese; shredded, - divided use 10 Flour tortillas Preheat oven at 350┬░F/175┬░C. In a large saucepan, cook onions and bell peppers in oil until tender. Stir in turkey, corn, enchilada sauce, chilli spice, and salt until cooked through. Spread about 1/10th filling and 2 tsp cheese on each tortilla, roll up and place seam side down on a baking sheet lined with foil. Sprinkle with remaining cheese. Bake for 30 minutes.
