MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Pancakes From Mix Categories: Five, Dairy, Breads Yield: 6 Pancakes 3/4 c Milk 1 lg Egg 2 tb Oil 1/4 ts Vanilla extract (opt) 1 c Pancake mix EQUIPMENT: Rubber spatula, 12" nonstick skillet, 1/4 cup dry measuring cup, Spatula (pancake flipper), Plate TO MAKE 1 BATCH OF 6 PANCAKES: In medium bowl, whisk milk, egg, oil, and vanilla (if using) until well combined. Add 1 cup pancake mix and stir gently with rubber spatula until just combined (batter should look lumpy). Let batter sit for 10 minutes before cooking. Spray 12" nonstick skillet with cooking spray. Heat over medium heat until hot, about 1 minute. Use 1/2 cup dry measuring cup to scoop 1/4 cup batter into skillet. Repeat 2 more times, leaving space between mounds of batter (you want 3 pancakes to cook up separate from one another). Make sure to leave enough room to fit all 3 pancakes in the skillet. Cook pancakes until bubbles on surface begin to pop, 2 to 3 minutes. Pancakes cook quickly, so don't take your eyes off of the skillet! Use spatula to flip pancakes and cook until golden brown, 1 to 2 minutes. Transfer pancakes to plate. Repeat with remaining batter. Turn off heat. Serve. PRO TIP: Make sure you slide the spatula all the way underneath the pancake before you flip. If you have an electric griddle it's perfect for this recipe -- just set the griddle to 350┬░F/175┬░C. You should be able to fit 6 pancakes in one batch. The recipe can be doubled if you want to feed a crowd. To keep bigger batches of pancakes warm set your oven to 200┬░F/93┬░C. As you finish a batch, place them on a cooling rack set in a rimmed baking sheet and keep them in the oven while you make the rest of the cakes.
