MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Boris's Stuffed Mushrooms Categories: Mushrooms, Vegetables, Herbs, Citrus, Wine Yield: 20 Servings 20 lg White mushrooms; wiped clean - stemmed, set aside 1 sm Lemon juiced 1 md Onion peeled; cored, - quartered 2 lg Garlic cloves peeled 1 lg Rib celery; washed, cut in - chunks 3 tb Olive oil 1/2 ts Dried Oregano pn Salt Fresh ground black pepper 1 tb Dry sherry 1/4 c Minced fresh parsley MMMMM-------------------------EQUIPMENT------------------------------ 1 Jellyroll pan lined w/baking - parchment 1 Food processor steel knife - inserted 1 md Skillet Dip mushroom caps in lemon juice and place them, empty cavity up, in lined pan. Set oven to 350+#F/175+#C. Place onion, garlic, celery and mushroom stems in bowl of processor. Pulse on and off until all vegetables are minced. Heat olive oil in skillet over medium flame. Saut+¼ minced vegetables until they are very soft. Remove from heat. Add oregano, salt and pepper. Stir well. Taste. Adjust seasoning if needed. Add sherry-if desired. Adjust seasoning again. Fill mushroom caps with stuffing. Bake 25 minutes. Arrange on a platter and serve hot or at room temperature.
