MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Michael Victor Cordato: Sausage & Peppers Categories: Pork, Vegetables, Chilies, Herbs Yield: 10 Servings MMMMM----------------------PEPPERS & ONIONS--------------------------- 12 Anaheim peppers; quartered - top-to-bottom, seeded 1 c Extra virgin olive oil 20 cl Garlic; coarse chopped 1 lg Yellow onion; sliced 1/4" 1 1/2 ts Dried parsley 2 1/2 tb Dried oregano 1 ts Pepper; coarse ground ds Onion powder ds Garlic powder 1 ts Salt; as needed MMMMM--------------------------SAUSAGE------------------------------- 1 lb Sweet italian sausage; - sliced into pieces In a 4 qt sauce pot on med-low add oil and heat. Add fresh garlic, onion, and then peppers on top. Slowly add remaining ingredients over a 10-20 minute span (except sausage). Rotate and stir every 3-5 minutes cooking for 40 full minutes. SAUSAGE: In a medium skillet/pan on medium heat, add sausage pieces and cook through.
