MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Victor's Flattened Meatballs Categories: Beef, Herbs, Dairy, Breads, Citrus Yield: 4 Servings 900 g Minced beef 1 bn Fresh flat leaf parsley; - chopped 60 g Parmesan; fresh grated 60 g Breadcrumbs; fine grated 1 ts Nutmeg; fresh grated 175 ml Milk 60 ml Extra virgin olive oil lg Lemon or lime leaves; two - per meatball Place ground beef, parsley, salt, pepper, parmesan cheese, breadcrumbs, nutmeg, milk and extra virgin olive oil in a mixing bowl. Mix all the ingredients together well. Scoop mixture into the palm of your hands and form a meatball. Then flatten out the meatball so that it resembles a small, thin burger. Place the meat burger between two lemon leaves. Repeat process until youve used all the mixture. Cook on a grill for a few minutes on each side. As they cook, the oils from the lemon leaves will infuse the meat with lemon flavour. Use a tong to securely lift and turn over each burger so that it remains sandwiched between the two lemon leaves as it cooks. Transfer the meat (still sandwiched between the lemon leaves) to a serving platter and serve immediately. Your guests should discard the lemon leaves and eat the meat.
