MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Chicken Scaloppine w/Spring Vegetables Categories: Poultry, Vegetables, Wine Yield: 4 Servings 2 1/2 c Seasoned diced potatoes 2 c Frozen sliced carrots 2 c Frozen early harvest peas 2 c Frozen haricots verts 2 1/4 lb Thin-sliced chicken breast - filets, rinse, pat dry 1 13/16 oz Pkt leek soup mix; divided 10 3/4 oz Can condensed cream of - asparagus soup 1/2 c Chardonnay wine Vegetable oil Flour; for dredging Recipe courtesy Sandra Lee, 2007 Combine all vegetables in the bottom of a 5 qt slow cooker. Whisk together 2/3 of the leek soup mix with the condensed soup and wine. Pour over vegetables. Cover and cook on LOW setting for 4 hours. Heat oil in a large skillet. Combine the rest of the leek soup mix with some flour. Dredge chicken filets in flour mixture and place in skillet. Cook for about 2 1/2 minutes each side.
