MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Breast Of Chicken In Mushroom Sauce Categories: Poultry, Mushrooms, Wine, Vegetables Yield: 4 Servings 1/4 oz Dried porcini mushrooms 1/4 c Virgin olive oil 2 tb Unsalted butter 1/4 c Yellow onion; chopped 1/4 lb Fresh mushrooms; cleaned, - sliced 1/3 c Dry white wine 1/2 lb Plum tomatoes; peeled, - seeded, chopped Salt & ground black pepper 4 Boned, skinned chicken - breast halves 1/2 c Chicken stock or broth Soak the dried porcini in warm water for 10 minutes. In a small skillet over medium heat, heat half the oil and half the butter. Add the onion and sliced fresh mushrooms and saute for about 2 minutes, until the onions soften and the mushrooms give off their moisture. Add the wine and cook until the alcohol evaporates--about 1 minute. Add the tomatoes and crush them with the back of a large spoon. Add the reserved porcini, including the strained soaking liquid. Simmer the sauce over medium-high heat to reduce slightly, about 3 minutes. Season with salt and pepper. Meanwhile, in a large skillet over medium-high heat, cook the chicken breasts in the remaining oil and butter for 5 minutes, turning once, until nicely browned on both sides. Drain off excess pan drippings. Add the stock and cook for until the breasts are cooked through. Add the mushroom sauce to the chicken. Stir well and cook for 1 minute. Serve at once.
