MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Olga's Peasant Soup Categories: Lamb/mutton, Vegetables, Herbs, Grains, Squash Yield: 6 Servings 1 lb Ground lamb 1 md Onion; chopped 2 Ribs celery; chopped 3/4 c Quick-cooking barley 14 1/2 oz Can diced tomatoes 5 c Vegetable broth 2 cl Garlic; diced 2 sm Zucchini; diced 10 oz Frozen mixed vegetables 1 lg Bay leaf 1/4 ts Thyme 1/4 ts Greek oregano 1/4 c Dried parsley Salt & pepper In a large pot, brown lamb, onion and celery only until lamb is no longer pink. Drain off fat. Add tomatoes, garlic, bay leaf and broth. Bring to a boil. Add Quick barley, zucchini, frozen vegetables, thyme, oregano, and parsley. Then reduce to simmer for 30 minutes.
