MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Faith Hill's Carrot Salad
 Categories: Five, Vegetables, Herbs
      Yield: 6 servings
 
      1 lb Carrots; washed, peeled,
           - julienned
           Juice of 1 lime
    1/8 c  Extra virgin olive oil
    1/4 c  Cilantro; chopped
    1/4 c  Green onion; chopped
           Salt & pepper
 
  Using a peeler, cut the carrots into very thin slices.
  
  In a small bowl, whisk the lime juice and olive oil
  until it is emulsified and drizzle over the carrot
  peels. Toss.
  
  Add cilantro and green onion. Toss
  
  Add salt and pepper to taste.
