MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Big Bertha Brekkie Burritos Categories: Breads, Pork, Fruits, Chilies, Vegetables Yield: 3 Servings 6 Multi grain tortillas 6 lg Eggs 3 sl Streaky bacon 3 sl Gouda cheese 1/2 lg Bell pepper 1/2 lg Red onion 1/2 Avocado 1 Tomato ds Milk Sriracha chile sauce BBQ Sauce Turn on your sandwich press/grill to warm up. Then start slicing up your bell pepper, red onion, avocado, tomato and cheese. Put your bacon on to cook while continuing. While your bacon is cooking, add your 6 eggs and a dash of milk into a large microwave safe bowl. Place bowl in microwave and cook in 1 minute intervals until cooked, stirring after each interval. Cooking times may vary between each microwave, ours took about 5 minutes. These will turn out as a quick, easy office cooking style scrabbled eggs. Put 3 tortillas on plates and start to layer on your ingredients. We started with the bacon, added the egg and then the fresh ingredients. We added Sriracha and BBQ sauces to our burritos, but you could add any of your favourite toppings or sauces. Because our burritos are so large (aka Big Bertha), we needed to use two tortillas per burrito to get the wrapped up properly.
