MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Hyacinth's Grilled Lamb Chops w/Port Wine Sauce Categories: Lamb/mutton, Vegetables, Sauces, Wine Yield: 6 servings 18 Trimmed lamb loin chops 1 sm Onion 3 tb Soy sauce 3 tb Sesame oil 1/2 ts Worcestershire sauce 1 ts Black cracked pepper 3/4 pt Good quality tawny port 3 oz Chopped shallots 1/2 pt Rich brown sauce - (demi-glace) Dice the onion. Combine in a small bowl with all the other ingredients except the lamb. Rub this mixture on the lamb chops and store in a covered GLASS container overnight in the refrigerator. Remove the lamb chops one hour before you are ready to grill them. Prepare your grill. Grill the lamb chops until desired doneness. Remove lamb chops from the grill and let them sit for five minutes. Serve with Port Wine Sauce. PORT WINE SAUCE: Reduce port by 1/2. Add the shallots. Strain out the shallots and add 1/2 pint brown sauce to the port. Whisk together and heat through.
