MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Oliver Twist Categories: Vegetables, Pasta, Herbs, Chilies Yield: 4 Servings 1/4 c Olive oil 1 c Fine chopped onion 6 cl Minced garlic 56 oz (2 cans) Roma plum tomatoes; - broken in pieces, w/juice 1 c Tight packed, pitted, halved - Kalamata olives 2 tb Tomato paste 2 tb Drained capers 2 tb Minced anchovy fillets 1/2 ts Dried crushed basil 1/2 ts Dried crushed red pepper - flakes Salt 1 lb Penne pasta; cooked al - dente Recipe courtesy Emeril Lagasse In a large pot heat the olive oil over medium high heat. Add onion and saute until soft and lightly caramelized, about 6 minutes. Add the garlic and cook an additional 2 minutes. Add the tomatoes and the remaining ingredients and simmer until the sauce is thickened and slightly reduced, about 40 minutes. Adjust seasoning, to taste, cover and set aside.
