Texans in general perhaps, but you'd have to go to 
several places to get a complete nose-to-tail. 
Steakhouses serve steak, Tex-Mex ones seem to have 
the corner on skirt and plate, just as the Q joints 
have claimed all the briskets. Head, tail, liver, 
kidneys, tripe, feet, you have to go Mex-Mex. The 
rest of the beast goes to shoes and burgers.

if you fly over the city on 9/11 they do a revival of
the original memorial. 

For the second time since '02 I'm not flying - one year 
I took the TGV, which almost counts; this year I'll be 
with Lilli and Swisher at Ian and Jacquie's, and even 
if I wanted to fly someplace I wouldn't be able to.

That's not necessarily doing much.

It's not always clear whether the ones that get caught or at 
least prosecuted are the most malfeasant ones. Of course, just 
about any politician except maybe Massachusetts's the Duke, 
has skeletons in closets, so it's easy to stick it to them. 
And they look so adorable in black and white stripes.

---------- Recipe via Meal-Master (tm) v8.01

      Title: Beef Stock
 Categories: Italian, Sauces
      Yield: 6 servings

      2 lb Beef bones                          1 pn Of thyme
      2 md Carrots,                            8    Peppercorns
           Coarsely chopped                    1    Bay leaf
    1/2    Stalk celery, coarsely chop-        3 oz Tomato paste
           Ped                                 1    Cl Garlic
      1    Onion, coarsely chopped

  Preheat oven to 350 F. Bake bones until browned, about 1 hour.

  Place bones in large stock pot. Add remaining ingredients & enough water
to
  cover. Bring to boil; boil about 2 minutes.

  Remove from heat & strain. Discard bones & vegetables. Return the stock
to
  pot & cook over medium heat until reduced by 1/2.
