MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: GREEK SALAD SANDWICH - MARTHA STEWART LIVING Categories: .msl, Sandwich Yield: 10 Servings 1 10-inch round loaf of bread 1/2 c Oregano Lemon Vinaigrette -(separate recipe) 1/2 Head romaine lettuce 1 lb Feta cheese, cut into 1/4 -inch-thick slices 1 Cucumber, peeled if waxy, -and thinly sliced 12 Slices Oven Dried Tomatoes, -made with beefsteak -tomatoes (separate recipe) 1 sm Red onion, peeled and -thinly sliced 1/2 c Black oil-cured olives, -pitted & coarsely chopped -(see Note) 1/2 c Fresh oregano leaves or a -sprinkling of dried Freshly ground pepper 1. Cut bread in half horizontally, and scoop out some of the inside of the top half. Brush inside of bottom with 1/2 C vinaigrette. 2. Arrange lettuce on bottom half, and top with cheese. Layer cucumber slices in overlapping rows; repeat with tomato slices. 3. Spread out onion slices over tomatoes. Sprinkle with olives and oregano leaves or dried oregano. Add pepper to taste. Brush inside of top half of bread with remaining vinaigrette, and cover sandwich. Cut into wedges and serve, (To compress ingredients, put a dinner plate on top of loaf and weight moderately with a few soup cans for about an hour before serving.) NOTE: To pit olives, crush them with the side of a knife and remove pit. If olives are soft enough, pits can be removed easily with the fingers.
