We received quite a few recipes. Thank you to all who took the time to submit them! >From Sandra S: 3 or 4 slices of bacon, 3 tablespoons flour, 3 cups milk, 1 teaspoon sugar, 1 small onion or green onions, sliced. Vinegar to taste. Salt & pepper. Very young dandelion greens washed & trimmed. Yield: 4 servings Cut bacon into small pieces & fry until nearly crisp. Remove with slotted spoon & set aside. Add flour to about 3 tablespoons drippings in skillet (discard the rest) and cook a minute or two. Gradually stir in the milk over medium heat, whisking smooth. When space begins to thicken, stir in the reserved bacon bits, sugar & some vinegar to taste. Continue to cook & stir, adding salt & pepper to taste. Add the sliced onion & desired amount of fresh young dandelion greens & bring mixture to a boil. Serve immediately. Note: This cream sauce mellows the slight bite of the greens. Note! I am Pennsylvania Dutch and this is NOT the family recipe. I have very many dandelion recipes and this is one with a cream sauce.
